Tastes much fresher than store-bought. Mild flavor.
- 1 pound ground pork
- 1 tsp kosher salt
- 1 tsp dried sage
- 1/2 tsp cayenne pepper
- 1/4 tsp dried rosemary, crushed
- 1/4 tsp ground black pepper
- 1/4 tsp dried thyme
- 1/4 tsp nutmeg
- 1/3 tsp light brown sugar
Mix spices together then mix with pork.
Let sit in refrigerator, covered, for an hour for flavors to meld. Make into patties and cook in skillet until internal temperature is 145 degrees. Hold it for at least three minutes.
Make the patties thin. Roll out sausage and use a cookie cutter or greased 1/4 cup measuring cup. Flatten with hand using plastic wrap.
Other spices: marjorum, pinch of cloves . Ground turkey works well, too.
