Penne Pasta with Cherry Tomatoes
Primo with garden-fresh cherry tomatoes. The short cooking time brings out the great flavor of the cherry tomatoes. One of our favorite summertime meals.
- 1/2 pound penne pasta
- 1 garlic clove
- 1 cup cherry tomatoes, halved or quartered
- 1/2 tsp dried oregano
- 1/2 tsp dried parsley (1 TBL fresh)
- 1/4 tsp table salt
- 1/4 tsp black pepper
- 2 TBL grated parmesan cheese
- 2 TBL olive oil
Cook penne pasta per directions until al dente.
While pasta is cooking heat garlic in olive oil on med-low heat about 30 seconds. Turn to medium and add cherry tomatoes, oregano, salt, black pepper. Stir then turn to low and cook about 3 minutes.
Stir in cooked pasta, parsley, and parmesan cheese to skillet.
