Marinara Sauce

Simple to make marinara sauce.



Slowly caramelize onions in evoo on low heat.
Add garlic, dried herbs and cook about 5 minutes.
Deglaze pan with wine. Cook 2 minutes.
Add tomatoes with juices, sugar then stir. Low simmer, uncovered, until thickened, about 40 minutes.
Stir in basil leaves.

Doug's Notes

When simmering, the lower the better. The liquid should have few bubbles in it.

Long heat on fresh herbs will lose a lot of flavor; hence adding them at the end.
