Lentil Noodle Salad

Lentil noodle salad is delicious on a summer day.


1 cup lentils
1/3 cup white vinegar
1/2 TBL extra-virgin olive oil
2 TBL soy sauce (lite)
1 TBL fresh ginger, grated
1 TBL sesame oil
1/2 cup chopped green onions
1 clove garlic, minced
1 cup chopped water chestnuts
1/4 cup chopped fresh cilantro
6 oz spinach fettuccini, cooked and cut into small pieces


Boil lentils in 2 cups water, cover, then simmer for 10 minutes. Drain and put in medium bowl. Drain and put in medium bowl.
Combine vinegar, sesame oil, soy sauce, ginger, olive oil, and garlic. Pour over lentils and mix well. Stir in fettuccini. Chill several hours to blend flavors.
