Corn on the Cob

There seems to be an infinite number of ways to cook corn on the cob. The sooner the corn is cooked after being picked the better because the sugars turn into starches making the kernels tough.

Directions

Peel husks and remove tassels from corn. Put in boiling water and boil for 4 1/2 minutes. Remove and serve.

Another way is using the microwave...and it tastes good. Place two corn cobs in their husks in the microwave and cook on high 4 minutes. Let sit for one minute. Cut off stem end up to one row of kernels  using a bread knife. Grab the silk end and shake out the cooked cob. It will have little or no silk on it.

Doug's Notes:

Do not overcook or the kernels will be tough. This was published in the Peoria Journal Star (corn country).
