Use fresh asparagus. It is very tasty.
- 6 asparagus spears
- 1/2 onion, chopped
- 2 cups chicken broth
- 12 oz can of evaporated milk
- 1/8 tsp lemon juice
- salt, black pepper, to taste
- dutch oven
- food processor or blender
Cut tips from spears. Put in cup of water and boil in microwave 3 minutes.
Chop asparagus stalks into 1/2 inch pieces.
Sweat onions in dutch oven. Stir in asparagus pieces and cook for 5 minutes.
Add chicken broth, simmer 20 minutes.
Puree soup then return to dutch oven.
Stir in evaporated milk, simmer 5 minutes.
Stir in lemon juice and drained asparagus tips (prizes). Serve.
