How to Roast a Chicken

First, brine the chicken if it is not kosher. (Kosher chickens come brined).

Dissolve salt and sugar in cold water. Submerge chicken and put in refrigerator for 1 hour.

Remove and rinse chicken.

Rub chicken lightly with oil and season with pepper.

Tuck wings behind back. Roast at 350 degrees for 50 minutes, wing sides up

Turn chicken over so breast side is up. Put 1/2 cup water in roasting pan to prevent drippings from burning. Roast (about 25 minutes) until thickest part of breast is 165 degrees.

Transfer chicken to cutting board, cover, and let rest 10 minutes before serving.

I remove the skin before serving.
