Chile Rellenos

Literally meaning 'stuffed chilies'. This is a somewhat spicy Mexican dish.


1 aluminum broiler pan
1 large can Ortega green chiles
1/2 block Monterey Jack cheese
1/4 block cheddar cheese
4 to 6 eggs
2 to 3 TBL flour
salt, pepper to taste


Spray pan with Pam. After opening the chilies, insert a generous slice of Monterey Jack cheese in each chile. Place each chile in broiler pan across the ridges.
Mix eggs, milk, flour, salt, and pepper with egg beater. Pour over chiles. Sprinkle with shredded Jack and cheddar cheese.
Bake 30-45 minutes.
No need to cover chiles with egg will puff up.
