Penne Pasta with Cherry Tomatoes

Primo with garden-fresh cherry tomatoes. The short cooking time brings out the great flavor of the cherry tomatoes  One of our favorite summertime meals.

Ingredients

  • 1/2 pound penne pasta
  • 1 garlic clove
  • 1 cup cherry tomatoes, halved or quartered
  • 1/2 tsp dried oregano
  • 1/2 tsp dried parsley (1 TBL fresh)
  • 1/4 tsp table salt
  • 1/4 tsp black pepper
  • 2 TBL grated parmesan cheese
  • 2 TBL olive oil

Directions

Cook penne pasta per directions until al dente.
While pasta is cooking heat garlic in olive oil on med-low heat about 30 seconds. Turn to medium and add cherry tomatoes, oregano, salt, black pepper. Stir then turn to low and cook about 3 minutes.
Stir in cooked pasta, parsley, and parmesan cheese to skillet.
Serve immediately.
