Margherita Chicken Recipe

This delicious entree tastes like margherita pizza.

Ingredients

• 2 chicken breasts
• 3 TBL tomatoes, seeded
• 2 TBL fresh basil
• 2 garlic cloves, chopped
• 2 TBL olive oil
• 1/2 tsp salt
• 1/2 tsp ground black pepper

Directions

In a glass bowl puree marinade ingredients. Coat chicken 1 hour before cooking. Sear chicken on both sides on medium heat. Put in oven at 350F until done (about 8 minutes).

I like to make the marinade the night before so the ingredients have time to blend.
