Sterilizing Solution

red wine in wine glassSterilizing solution has two uses: sterilizing equipment or sterilizing must. Each one requires a different strength. Each winemaker has his own view on what the proper strength solution to use.

Sterilizing solution for equipment

 Soak equipment at least five minutes in sterilizing solution. Put some in a spray bottle to spray things like the hydrometer. Let air dry then use.

1 tbsp potassium metabisulfite weighs 20 g (0.7 oz)

Make a gallon of 1/2% sterilizing solution and keep it sealed in a jug so sulfur dioxide does not evaporate.


This gives 1% SO2



Dosage recommended by manufacturer

Mix well.


Use sterilizing solution or vodka in airlocks instead of water.
