Sterilizing Solution
Sterilizing solution has two uses: sterilizing equipment or sterilizing must. Each one requires a different strength. Each winemaker has his own view on what the proper strength solution to use.
Sterilizing solution for equipment
Soak equipment at least five minutes in sterilizing solution.
Make a gallon of 1/2% sterilizing solution and keep it sealed in a jug so sulfur dioxide does not evaporate.
- 1 1/2 tbsp. potassium metabisulfite
- 1 gallon spring water
OR
This gives 1% SO2
- 2 tsp. potassium metabisulfite
- 1 liter spring water
OR
- 4 tsp. potassium metabisulfite
- 1/2 gallon spring water
OR
Dosage recommended by manufacturer
- 2 oz potassium metabisulfite
- 1 gallon water
Mix well.
Tips
Use sterilizing solution in airlocks instead of water.
